Alvito's Cheese Cake Recipe

How to make a cheese cake

Ingredients:
1 big roll of Marie biscuits
1 tin condensed milk (400 gms)
1 small carton milk cream
juice of 8 small lemons
Cherries (optional)

Method:
  1. Spread a little butter into the serving dish. (This step is optional and may be omitted if you are watching those calories)
  2. Add the biscuits crushed by hand or you can also turn them into powder by putting them into a food processor. Keep aside.
  3. Whip the condensed milk and milk cream until the mixture it is thick.
  4. Add the juice of the lemons to it. 
  5. Continue whipping till it thickens further.
  6. Divide this mixture in half.
  7. Pour half onto the powdered biscuits and mix well so that there is no dry stuff visible. 
  8. Add more of the whipped mix if required.
  9. Pour the rest of the whipped mix into the bowl so that you get a smooth finish at the top.
  10. Decorate with cherries.
  11. Refrigerate for a few hours.
  12. Serve cold.

Batica

Ever wondered how to make the batica? This coconut cake recipe is very easy to make. The Batica is a great accompaniment with your tea and is pretty easy to make. However, if you have no easy access to fresh coconut to try out this Goan batica recipe, you could try out the Batica with dessicated coconut.
Batica Recipe
Ingredients:
1/2 kg semolina (rawa)
2 coconuts (preferably a wee bit tender)
600 grams sugar
6 large eggs
250 grams butter
1/2 table spoon baking powder
a pinch of salt (I used 1/2 level teaspoon)
Vanilla/Rose Water(Optional)

Method:
  • Scrape the coconut carefully avoiding any part of the shell.
  • Grind it into a fine paste.
  • Cream the sugar and butter and beat until the sugar melts.
  • Separate the yolks from the whites of the eggs.
  • Add the yolks to the mixture one at a time, beating thoroughly.
  • Add in the salt and baking powder.
  • Beat the whites till they stand in stiff peaks.
  • To the mixture add semolina alternately with the egg whites, beating well after each addition.
  • Blend in the coconut paste and keep overnight.
  • Next morning, if the dough is stiff add a little milk to soften it.
  • If desired, flavour it with vanilla or Rose Water.
  • Put the mixture in a greased flat baking tin. (Use two 9" cake tins or a bigger one depending on the size of your oven)
  • Bake in moderate oven until done. Bake for about 40-45 mins. at 180°C for each 9" cake tin.  I baked the whole quantity in a 12" pan for one hour on 200°C.

Caramel Pudding

This caramel pudding is one of the easiest and fool proof recipes that you could ever try. It simply cannot fail and is very easy to make. So simple that even the male species can make this one; yeah, even those who have never set foot in the kitchen.

Caramel Pudding
Ingredients:
1 tin condensed milk (400gms)
1.5 tins water
6 eggs
1 serving spoon sugar (the calorie conscious can skip this and it will still be sweet enough)
1 table spoon sugar (for the caramel)

Method:
  • Put all of the above ingredients into a bowl / mixer hopper and whip for a minute.
  • Make caramel of the sugar in a flat bottomed vessel. 
  • Try to coat the sides of the vessel too by turning it around with a pair of tongs or pot holders.
  • Pour the mixture made in step 1 into the vessel.
    Getting ready to steam the pudding
  • Steam for 25-30 minutes (or till a knife inserted in the center comes out clean) in a bigger vessel or a pressure cooker on simmer without the whistle. Put about a half inch of water in the larger vessel.
  • Make sure you have covered the vessel holding the mixture so that the steam doesn't get in.Take care not to let the steam come on your hand as you open the lids to check whether done. Don't lift the lids up but slide them horizontally.         

  • How to steam the pudding
  • Run a blunt knife in the vessel all round the pudding, overturn a plate on the vessel and turn vessel with plate upside down. Your caramel pudding is ready to be served.
